Hey Folks! Thanks for dropping by my site. I’m Charlotte Ann Eaton. My lifelong love for baking hit a speed bump as a young adult when my family unanimously decided to go gluten free as a household to accommodate the extreme sensitivity of several family members and to improve the health of the rest of us by avoiding unnecessarily inflammatory foods. For some time I supposed my days of baking cakes and pastries were over – at least of baking any much worth eating.
Over the next decade however, my talented mother and I studied the art of gluten free baking – relearning together how to bake. I remember my excitement when I realized that, with the right ingredients and techniques, gluten-free didn’t have to be a poor substitute for wheat, but could be delicious in its own right. Since then I have worked on trying find, develop, tweak, and master completely gluten-free recipes which the whole family could safely enjoy and not feel as though they were missing out.
